A healthy snack is always a great way to kick off homework, chill time, or just about anything. My hubby and oldest love hummus. Every recipe I came across called for tahini, which I wasn’t in stock of and had a hard time locating at our local farmer’s market. I have experimented with the basic recipe several ways. Here is one of our faves:
Cilantro-Lime Hummus
INGREDIENTS
2 cans chickpeas, drained
1 tbsp minced garlic
2 tbsp olive oil
1 lime
Salt & pepper to taste
2-3 springs fresh cilantro
INSTRUCTIONS
Set aside one small piece of cilantro for garnish. In a bowl (with hand-blender) or in a small blender, blend together all remaining ingredients.
