Munchy Monday: Quick & Dirty Rice

I haven’t posted a recipe in a few weeks, and I’ve had a craving for this lately. So, it only made sense that I post it for you (and cook it for us). I give you [drumroll please] …

QUICK & DIRTY RICE

This dish can be done in the amount of time it takes to cook the rice. With mainly fresh ingredients, few spices are needed. Enjoy!

INGREDIENTS
1c uncooked rice (I use a mix of white and brown)
1/2lb favorite sausage (I like chorizo)
3/4lb shrimp
1 clove garlic, crushed (~1tbsp jarred crushed garlic)
2 stalks celery
1 bell pepper (I used yellow)
1 15oz can organic diced tomatoes
1/2c organic chicken broth

DIRECTIONS
Bring 1 2/3c water to boil in pan. Once boiling add rice. Cover; reduce heat to low; simmer for ~20 minutes.

While the rice cooks, chop veggies and begin browning the sausage with the garlic in a pan over medium heat. Once browned, add vegetables and chicken stock. Bring to a boil and add shrimp. Once the shrimp are pink, remove pan from heat.

Spoon sausage mixture over rice. Serve.

Note: This would be great with onion added as well. I cannot eat onion while breastfeeding (it upsets the baby’s stomach), so this recipe excludes the onion.
