Munchy Monday: Mexican Lasagna

It sounds weird, but that is the only way I can describe this creation that has become a family favorite. It is a quick and simple recipe that can be made ahead or in a hurry.


  • 5 flour tortillas
  • 1 Rotisserie chicken from grocery store
  • 1/2c Salsa
  • 1/2c Sour cream
  • 1c shredded cheese (I use half Monterrey Jack & half Cheddar


Lightly grease an 8? round dish (I use a large souffle dish). Pull chicken off bone and discard skin. Chop into chunks. Add sour cream and salsa to chicken and mix together. Cut tortillas into quarters and place 4 quarters slighlty covering one another in bottom of dish. Sprinkle a small amount of cheese over the tortillas, cover with a large spoonful of chicken mixture, cover with a sprinkle of more cheese. Repeat process until last tortilla. On the last layer sprinkle remaining cheese. Cover dish with aluminum foil and cook in 325 degree oven until cheese is bubbling. Remove aluminum foil and keep dish in oven. Once cheese to begins to brown, remove from oven. Let cool. Cut into triangles and serve.

This is delicious and quick  … great with a salad and a cold beer!
