Munchy Monday: BreakFAST

I’m not a morning person, so the thought of making my kid a healthy breakfast every morning at the crack of dawn is not appealing.  Besides, you never know what “crisis” will emerge in the wee hours – lost ponytail holder, missing sock, rounding up homework, etc. There is an easy solution:

Sunday I make breakfast for the week.  (If you can’t stand repitition, this is not the solution for you.)  Last night it was sausage and waffles.  Put a serving on a plate in the fridge and warm in the AM.  Perfect!

WAFFLES

  • 1c veg oil (or melted butter)
  • 2c whole wheat flour
  • 2c all-purpose flour
  • 2T sugar
  • 2T baking powder
  • 4 eggs
  • 4c buttermilk

Heat waffle iron.  Beat eggs, add remaining ingredients.  Mix well.  Makes hearty, (somewhat) healthy, fluffy waffles.

(Makes about 20 small waffles)
